Scientists at UC Irvine have come up with a way to unboil egg whites, begging the question – why would you want to? Bizarre food interests aside, the team had been working on ways to rescue misfolded proteins. The new development, described in the journal ChemBioChem is expected to save the biotechnology industry millions from improved efficiency.
