Turnips are turning up all over

These early spring days find the farmers markets and supermarkets well supplied with local asparagus, artichokes and a vegetable with a little less glamour but just as much pizzazz - freshly dug turnips.

These small, mildly flavored turnips, with their bright-green tops still attached, are harbingers of the season. They're mostly white - the Tokyo variety - but also in the stands: the flattish, rose-tinged Milan variety, the purple top and even a bright-red one aptly named Scarlet turnip.
