You can call it a cafeteria, but the designers and operator say the revamped dining space at 55 Water St. in Manhattan’s Financial District is far more than the linoleum floors and fluorescent lighting often associated with the term. The area, on the ground floor of the 54-story tower, is divided into comfortable yet upscale Café 55 and a coffee shop done in the style of a French bistro.
