Scientists unlock the magic to unboil a hard-boiled egg for cancer research

In their bid to recover proteins from egg-whites and reuse them for cancer research, a team of scientists led by a professor of chemistry and molecular biology at the University of California, Irvine, have achieved the process of returning hard-boiled eggs to their original state.

Gregory Weiss with his research team understood that egg whites are composed of proteins that start out with a certain formation, “Once you boil them, the proteins stay intact but they change their conformation,” he said.
