Elias Miranda, who began his restaurant career as a 17-year-old dishwasher, has been named executive chef/partner at Fleming's Prime Steakhouse and Wine Bar in River Oaks.
The Acapulco native came to the United States from Mexico in 1998. He was a dishwasher for three days at the now-shuttered Cafe Noche on Montrose, before being promoted to a prep station.
