THERE’S A CRUEL WIND blowing down Nørrebro’s Jægersborggade, but on a wintry weeknight, Manfreds & Vin at No. 40 provides a haven of warmth in the icy Danish capital. As diners nestle together at small tables or along the bar, sipping organic ale and natural wines, the tiny open kitchen is in full swing. Two chefs arrange chickweed on sea trout tartare and charred cauliflower on a bed of parsnip purée.
