Children Eat Extra Vegetables when Served Soon after Recess: Study

A new research has showed that serving lunch soon after recess leads students to eat more fruits and vegetables. Researchers identified that 45% far more elementary students consumed at least one serving of fruits and vegetables when they were served lunch soon after recess. The total fruit and vegetable consumption was enhanced by 50%.

Cornell University professor David Just is the co-author of the study and he looked into seven elementary college cafeterias in Orem in the course of the spring and fall of 2011.
